Some say the origins hark back to the 4th century when the fermentation of rice was used by the Chinese as a way to prevent fresh fish from deterioration. Sushi has evolved through times, but a major change came in the 14th century when rice started to be part of the meal and rice vinegar was added, creating the typical sour taste which gives the dish its name: sushi vaguely means “to be sour”.
In the 19th century, Europe learned about sushi, but it was in recent times that it became a popular phenomenon, overcoming prejudice, opening minds, mouths,
and now closets!
